Sustainability aims to draw attention to the risks arising from the inappropriate use of natural resources and the need to safeguard production systems for future generations.
With the 2030 Agenda for sustainable Development adopted in 2015, the concept of sustainability, which cover the environmental, social and economic dimensions of a system, was formulated in the 17 Sustainable Development Goals (SDGs), covering a large part of concerns related to the agricultural sector, rural development and, more generally, food production and consumption.
In this regard, the FAO, with the SAFA indicators, has svnthesised an approach that allows a holistic assessment of the sustainability of Food Systems.
At the same time, the adoption of Environmental, Social and Corporate Governance (ESG) reporting and Life Cycle Assessments (LCA) to food chains, pushes producers to assess their level of sustainability and to communicate it to stakeholders and consumers, so that they can develop their strategies for purchasing products with low impact on sustainability and preserving their health.
All these issues place researchers in front of new research paths that deserve to be studied in depth by comparing experiences and research methods with an interdisciplinary approach.
